Pepper & Noodle Salad

A Refreshing Salad with Sweetcorn, Spring Onions, and Salted Peanuts


Ingredients :

  • 200g rice noodles
  • 1 red pepper
  • 1 yellow pepper
  • 2 cloves of garlic
  • 2 fresh red chilies
  • 1 x 198g tin of sweetcorn
  • 1 bunch of spring onions
  • 1 handful of salted peanuts
  • 3 tablespoons olive oil
  • 2 limes

Method :

  1. Soak the rice noodles in a large bowl of warm water for 20 minutes.
  2. Deseed and slice the red and yellow peppers into strips. Peel and finely slice the garlic, and deseed and finely slice the chilies.
  3. Drain and rinse the sweetcorn. Trim and finely slice the spring onions, then roughly chop the salted peanuts.
  4. Bring a large pan of water to a boil. Drain the noodles and add them to the pan. Cook for a couple of minutes until they are soft, then drain and immerse them in a bowl of cold water until you’re ready to use them.
  5. In a large frying pan, heat 1 tablespoon of olive oil. Add the sliced peppers, garlic, and chilies, cooking for a couple of minutes until the peppers soften slightly.
  6. Drain the noodles and stir them into the frying pan. Add the sweetcorn and spring onions, drizzle with the remaining olive oil, and squeeze over the lime juice. Mix well to coat all the ingredients.
  7. Scatter the salted peanuts on top and season with black pepper to taste.
