Ingredients :
- 1.2 kg baby potatoes, unpeeled
- 1 small zucchini, thinly sliced
- 1/4 small red onion
- 1 tbsp red wine vinegar
- 1/2 tsp caster sugar
- 1/2 tsp sea salt
- 300 g bottle Kewpie mayonnaise, well chilled
- 12 Coles mini tomatoes, halved
- 4 pitted green Sicilian olives, quartered lengthways
- 2 tbsp basil pesto
- 1-2 tbsp extra virgin olive oil
- Small fresh basil leaves, to sprinkle

Method :
Step 1: Preheat the oven to 220°C (200°C fan forced). Line two large baking trays with baking paper. Trim both ends of each potato and cut each in half crosswise into 2.5 cm thick pieces. Place the baby potatoes, cut-side down, on one of the lined trays. Spray with 1-2 tbsp of extra virgin olive oil and season. Roast for 35 minutes.
Step 2: On the second lined tray, arrange the thinly sliced zucchini. Spray with oil and season. In a bowl, combine the red onion, red wine vinegar, caster sugar, and sea salt. Set aside for 20 minutes to pickle.
Step 3: Add the zucchini to the oven with the potatoes and roast for an additional 15 minutes, or until the potatoes are golden and tender. Remove the vegetables from the oven and allow them to cool completely.
Step 4: Remove the cap from the chilled Kewpie mayonnaise. Pipe a dollop on top of each potato slice. Arrange the potato slices on their sides, just touching, around the edge of a large serving plate to form a wreath.
Step 5: Pipe additional small peaks of mayonnaise on top (refer to the picture for guidance). Garnish with zucchini slices, halved mini tomatoes, and quartered olives. Drain the pickled onion mixture and arrange it on top. Combine the basil pesto with enough oil to make it drizzle-friendly, then drizzle over the wreath. Finish by scattering fresh basil leaves for decoration. Serve and enjoy!
