Ginger Cake
This cherished ginger cake recipe has been lovingly passed down through generations. Originally shared between my grandmothers after a family gathering, it holds a special place in our hearts. Though my mother lost her battle with cancer, this recipe will continue to bring joy, especially as my daughter prepares to welcome a baby girl into the family!

- 200g (1 cup, firmly packed) brown sugar
- 2 tbsp golden syrup
- 2 eggs

- 265g (1 3/4 cups) self-raising flour, sifted
- 160ml (2/3 cup) milk
- 55g (½ cup) walnut halves

Allergens! This recipe may contain gluten, wheat, tree nuts, eggs, and milk.
Method :
Step 1: Preheat your oven to 180°C (or 160°C for fan-forced). Grease the base and sides of a 20cm round cake pan with oil and line it with baking paper.
Step 2: In a mixing bowl, use electric beaters to cream together the butter, brown sugar, and golden syrup until the mixture is pale and creamy. Add the eggs one at a time, beating well after each addition. Mix in the ginger until well combined. Transfer this mixture to a larger bowl. Alternately fold in the sifted flour and milk using a large metal spoon until fully incorporated.
Step 3: Spoon the cake batter into the prepared cake pan. Bake in the preheated oven for about 45 minutes or until a skewer inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 4: For the coffee buttercream, dissolve the coffee granules in boiling water in a small jug. Set aside to cool. In a bowl, use electric beaters to beat the butter until pale and creamy. Gradually add the icing sugar and mix until well blended. Finally, stir in the cooled coffee mixture until fully combined.
Step 5: Spread the coffee buttercream evenly over the top and sides of the cooled cake. Garnish with walnut halves for a delightful finish.
