Chinese Roasted Pork with Stir-Fried Vegetables

Ingredients :

  • 3 pork fillets (350g each), trimmed
  • 2 tbsp peanut oil
  • 2 large carrots, trimmed, peeled, and cut into matchsticks
  • 2 red capsicums, thinly sliced
  • 200g snow peas, trimmed and thinly sliced
  • 6 green onions, cut into 6cm pieces
  • 2 garlic cloves, crushed
  • 2cm piece ginger, grated

Marinade

  • 1/3 cup hoisin sauce
  • 1/2 tsp Chinese five spice
  • 1 tbsp brown sugar
  • 1 1/2 tbsp sweet chili sauce
  • 1 tbsp Kikkoman less salt soy sauce

Method :

Step 1: To prepare the marinade, combine the hoisin sauce, Chinese five spice, brown sugar, sweet chili sauce, and soy sauce in a glass bowl.

Step 2: Preheat your oven to 200°C. Place the pork fillets on a large plate and pour half of the marinade over them, brushing to coat evenly. Add 1 tablespoon of cold water to the remaining marinade and set aside.

Step 3: Place the pork on a wire rack set inside a ceramic baking dish. Roast for 25 to 30 minutes or until cooked through.

Step 4: While the pork is roasting, heat a wok over medium heat. Add the peanut oil and swirl to coat. Add the carrots and stir-fry for 1 minute. Then, add the capsicums, snow peas, green onions, garlic, and ginger. Stir-fry for an additional 2 to 3 minutes, or until the vegetables are tender.

Step 5: Thinly slice 2 of the pork fillets. Reserve the remaining fillet for a related recipe (Pork Nasi Goreng). Divide the stir-fried vegetables among 5 plates, reserving 1 plate for Night 2. Top the remaining 4 plates of vegetables with the sliced pork and drizzle with the reserved marinade. Serve warm.
