Method :
Step 1: In a bowl, combine the chicken mince, breadcrumbs, parmesan, crushed garlic, and whisked egg. Mix well. Using damp hands, shape the mixture into 12 balls and flatten slightly to form rissoles.
Step 2: Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Cook the rissoles in batches for 3-4 minutes on each side until golden and nearly cooked through. Transfer to a plate.
Step 3: In the same pan, heat the remaining oil over medium-high heat. Add the mushrooms, capsicum, and onion. Cook, stirring for 5-8 minutes until golden. Stir in the pasta sauce and 250ml (1 cup) water, bringing it to a simmer. Reduce heat to low and add the rissoles, cooking for another 10 minutes until cooked through and the sauce thickens slightly. Stir in the olives.
Step 4: Meanwhile, cook the pasta in a saucepan of salted boiling water according to packet directions until al dente. Drain well.
Step 5: Serve the pasta in bowls topped with rissoles and sauce. Sprinkle with fresh basil leaves if desired.
