Chao Tze (Traditional Chinese Dumplings)

- 200g (1 1/3 cups) plain flour
- 250g pork mince
- 2 green shallots, thinly sliced, plus extra for serving
- 150g wombok (Chinese cabbage), finely shredded
- 1 1/2 tbsp soy sauce
- 1 tbsp sesame oil
- Cornflour, for dusting
- Dipping sauce, for serving
- Julienned fresh red chili, for garnish

Method :
Step 1: In a bowl, place the flour and create a well in the center. Add 105ml of cold water and mix using two chopsticks, adding more water if necessary to form a dough. Turn the dough onto a lightly floured surface and knead for 5 minutes until smooth and elastic. Return to the bowl, cover with plastic wrap, and let it rest for 1 hour.
Step 2: While the dough rests, prepare the filling by mixing the pork mince, shallot, cabbage, soy sauce, and sesame oil in a bowl. Season to taste and refrigerate.
Step 3: Preheat your baking tray by greasing and lining it with baking paper. Divide the dough into quarters, keeping one portion covered. Roll the remaining dough into a log on a floured surface, then cut it into 6 equal pieces. Flatten each piece into a disc, dusting your rolling pin with cornflour, and roll out to an 8cm diameter.
Step 4: Place 2 tsp of the mince mixture in the center of each disc. Brush the edges with water, fold in half, and pleat one edge as you seal the dumpling. Arrange them on the prepared tray, covering loosely with a damp tea towel. Repeat with the remaining dough and filling to make about 24 dumplings.
Step 5: Bring a large saucepan of salted water to a boil. Cook the dumplings in batches for 5 minutes or until cooked through. Use a slotted spoon to transfer them to a serving bowl. Enjoy the dumplings with the dipping sauce, chili, and extra shallots.
