Ingredients :

- 12 small gingerbread men biscuits
- 12 chocolate wafer rolls
- 400ml Baileys Irish Cream liqueur
- 80ml (1/3 cup) vodka
- Ice cubes, to serve
- 125ml (1/2 cup) thickened cream, whipped to soft peaks
For the Spiced Syrup:
- 70g (1/3 cup) caster sugar
- 2 tbsp golden syrup
- 2cm piece fresh ginger, peeled and sliced
- 1 cinnamon stick
- 2 whole cloves
Allergens! This recipe may contain gluten, wheat, egg, milk, and lactose.
Directions :
Step 1:
To prepare the spiced syrup, combine the caster sugar, golden syrup, and 80ml (1/3 cup) water in a small saucepan. Stir over low heat until the sugar dissolves completely. Add the sliced ginger, cinnamon stick, and whole cloves. Let it simmer for 5 minutes, then pour the syrup into a heatproof jug or bowl. Chill in the fridge for 1 hour. After chilling, strain the syrup to remove the spices.
Step 2:
Using the melted white chocolate, attach 8 gingerbread men to 8 chocolate wafer rolls. Set aside to allow the chocolate to harden.
Step 3:
Crumble the remaining gingerbread men onto a plate. Dip the rims of 4 serving glasses into the chilled spiced syrup, allowing any excess to drip off. Next, dip the rims into the crushed gingerbread to coat. Set the glasses aside until the coating is firm.
Step 4:
In a large jug, combine the Baileys Irish Cream, vodka, and 1/3 cup of the spiced syrup. Add ice cubes and stir to mix well. Strain the mixture into the prepared glasses. Gently spoon the whipped cream on top, drizzle with a little more spiced syrup, and sprinkle with the remaining crumbled gingerbread. Finish by adding the decorated and undecorated wafer rolls to each glass.
Recipe Notes :
You can prepare the spiced syrup up to a week in advance and store it in a jar in the fridge, making your holiday prep even easier!
