Delicious Pad Thai

Ingredients :
- 200g dried rice stick noodles
- 2 tbsp peanut oil
- 200g firm tofu, drained and cut into 1cm pieces
- 400g chicken breast fillets, trimmed and thinly sliced
- 3 garlic cloves, crushed
- 2 eggs, lightly whisked
- 1/3 cup Pad Thai paste
- 2 tbsp fresh lime juice
- 1/2 cup chopped peanuts
- 1 bunch chives, chopped
- 1 1/2 cups (85g) bean sprouts
- 1 bunch coriander, leaves picked
- Lemon wedges, to serve

Recipe Method :
Step 1: Place the noodles in a heatproof bowl and cover them with boiling water. Allow them to soak for 15 minutes, then drain well.
Step 2: In a large wok over medium-high heat, heat 1 tablespoon of peanut oil. Add the tofu and stir-fry until golden brown. Drain the tofu on a paper towel.
Step 3: Add the remaining tablespoon of oil to the wok and increase the heat to high. Stir-fry the chicken and garlic until the chicken is fully cooked. Push the chicken to one side of the wok and pour in the lightly whisked eggs. Let them cook without stirring for 1 minute, then toss in the noodles, Pad Thai paste, and lime juice.
Step 4: Remove the wok from heat and mix in the chopped peanuts, chives, bean sprouts, and coriander. Serve with lemon wedges for an extra zesty touch.
