Layered Mexican Sweet Potato Salad

- 300g small sweet potatoes, cut into 3cm pieces
- 500g baby desiree potatoes, unpeeled, cut into 3cm pieces
- 60ml (1/4 cup) olive oil
- 2 corncobs
- 250g cherry tomatoes, quartered
- 400g can black beans, rinsed and drained
- 2 avocados, sliced
- 60g baby spinach
- 125ml (1/2 cup) chipotle ranch dressing
- 65g (3/4 cup) coarsely grated vintage cheddar
- 1 green shallot, thinly sliced
- 30g plain corn chips, crushed
- Fresh coriander sprigs, to serve
- Sour cream, to serve (optional)

Method :
1. Roast the Potatoes:
Preheat the oven to 220°C (200°C fan forced) and line a baking tray with baking paper. Place the sweet potatoes and baby desiree potatoes on the tray. Drizzle with 2 tablespoons of olive oil, season, and bake for 40 minutes or until golden and tender.
2. Char the Corn:
While the potatoes are roasting, heat a chargrill pan over medium-high heat. Drizzle the corncobs with 1 tablespoon of olive oil and cook, turning occasionally, for 7-8 minutes until charred and tender. Allow to cool slightly, then cut the kernels off the cobs.
3. Assemble the Salad:
In a 2.5L (10 cup) glass serving dish, layer the roasted potatoes, followed by the cherry tomatoes, black beans, corn kernels, sliced avocados, and baby spinach. Drizzle with the chipotle ranch dressing.
4. Add the Toppings:
Top the salad with coarsely grated vintage cheddar, sliced green shallot, crushed corn chips, and fresh coriander sprigs. Serve with a dollop of sour cream, if desired.
