Shrimp and Soba Noodle Salad
Inspired by the delicious Shrimp and Soba Salad from Panera Bread®, I decided to recreate it at home—and I fell in love with my version! This refreshing salad has become one of my absolute favorites.
Ingredients :
Orange Miso Dressing:
- ¼ cup miso paste
- ¼ cup canola oil
- 2 tablespoons rice vinegar (adjust to taste)
- 1 tablespoon grated orange zest
- 1 tablespoon orange juice
- 1 tablespoon grated fresh ginger
- 1 teaspoon mirin (Japanese sweet wine)
- 1 teaspoon peanut butter
- 1 teaspoon chile garlic sauce
Salad:
- 1 (8.8 ounce) package dried soba noodles
- 2 cups baby spinach
- 1 cup carrots, cut into matchstick-sized pieces
- ½ cup shredded cabbage
- ½ cup sliced snow peas
- 8 cherry tomatoes
- 16 cooked shrimp, peeled and deveined
- 2 green onions, finely chopped
- 1 tablespoon toasted sesame seeds
Directions :
Step 1: In a bowl, whisk together miso paste, canola oil, rice vinegar, orange zest, orange juice, ginger, mirin, peanut butter, and chile garlic sauce until the dressing is well blended.
Step 2: Bring a large pot of water to a boil. Add the soba noodles and return to a boil. Cook the noodles until tender, about 5 to 8 minutes. Drain them in a colander under cold running water until cool, about 1 minute. In a large bowl, toss the cooked soba noodles with half of the miso dressing until thoroughly coated.
Step 3: Divide the spinach among 4 serving bowls, topping each with a quarter of the dressed noodles. Distribute the carrots, cabbage, snow peas, and cherry tomatoes evenly among the bowls, then top each with 4 shrimp. Drizzle the remaining miso dressing over each bowl to taste, and finish with a sprinkle of green onions and toasted sesame seeds.
Cook’s Note :
Feel free to adjust the rice vinegar to your liking. I personally enjoy adding 2 to 3 tablespoons for extra tartness!
